Ingredients
1/2 tsp cinnamon .
1 tbsp soy sauce .
1/2-3/4 c almonds or pecans .
1/2 c orange juice .
1 large onion, sliced .
2 c garbanzo beans (1 can) .
4 garlic cloves, minced .
1 tbsp olive oil .
1/2 tsp ground cumin .
2 tbsps lemon juice or lime juice .
1-2 tbsp fresh ginger, minced .
2 carrots, cut into 1/2 inch slices .
2 tbsps fresh parsley, sliced .
1/4-3/4 c dates, pitted & sliced .
1 tbsp tomato paste .
1/2 tsp black pepper .
1/2 tsp salt .
1/4-1/2 tsp cayenne .
12 boneless skinless chicken thighs
Directions
Step #1 Combine the first 10 ingredients (orange juice through to black pepper.
Step #2 )This will be the marinade for the chicken.
Step #3 Put the marinade in a plastic zip lock bag.
Step #4 Cut the chicken into chunks.
Step #5 Add the chicken to the zip lock bag.
Step #6 Refrigerate & marinate 4 to 24 hrs.
Step #7 Put the rest of the ingredients in a casserole dish.
Step #8 Add the chicken & marinade & mix.
Step #9 Bake at 350 degrees for 1 1/4 hrs.
