Herbed Beef Stew Recipe

Ingredients
  • 1/4 tsp salt .
  • 2 tbsps minced fresh parsley .
  • 3 c cubed peeled potatoes (I don't peel my potatoes just wash & cut them up) .
  • 2 c water .
  • 1 tsp dried thyme, divided .
  • 1/4 c cold water .
  • 2 tsps dried basil, divided .
  • 1/4 tsp pepper .
  • 2 bay leaves .
  • 1 tsp paprika .
  • 1 tbsp canola oil .
  • 1 tsp garlic powder, divided (I use minced garlic, a tsp) .
  • 3 c quartered peeled small onion (I use only 2 c of onions simply personal preference) .
  • 6 tbsps all-purpose flour, divided .
  • 2 c sliced carrots .
  • 1 1/2 lbs beef stew meat, cut into 1 inch cubes .
  • 3 tbsps tomato paste .
  • 2 tsps beef bouillon granules

Directions
  • Step #1 In a large resealable plastic bag, mix 4 tbsps flour, paprika & pepper.
  • Step #2 Add beef, a few pieces at a time, & shake to coat.
  • Step #3 In a Dutch oven, brown beef in oil over med-heat/flame.
  • Step #4 Add the water, 3/4 ts thyme, 1 1/2 tsps basil, bouillon, tomato paste, 3/4 ts garlic powder & bay leaves.
  • Step #5 Bring to a boil.
  • Step #6 Reduce heat; cover & let simmer for 1-1/2 hrs or until meat is almost tender.
  • Step #7 Add potatoes, onions & carrots, Cover up & let simmer 30 mins longer or until the meat & vegetables are tender.
  • Step #8 Discard bay leaves.
  • Step #9 In a small bowl, salt & the remaining flour, basil, mix the parsley, thyme & garlic powder.
  • Step #10 Add cold water; stir until smooth.
  • Step #11 Stir into stew.
  • Step #12 Bring to a boil; cook & stir for 2 mins.
