Beef Tortellini Soup Recipe

Ingredients
  • 1 leek, sliced (make sure you wash it well, they can be very gritty) .
  • 2 carrots, sliced .
  • 1 lb beef round steak, cut in small dice .
  • 1 bay leaf .
  • 1 celery rib, sliced .
  • 1 lb beef tortellini or cheese tortellini .
  • 1 tsp dried marjoram .
  • 6 c strong beef stock .
  • 1 turnip, sliced (You can also use rutabega or some sliced cabbage) (optional) .
  • 1 large ripe tomato, sliced or 1 (8 oz) can sliced tomatoes .
  • 1 garlic clove (optional)

Directions
  • Step #1 Brown beef well in a deep dutch oven or stock pot.
  • Step #2 Add leek, celery, & onion & saute on low until veges are soft.
  • Step #3 Add broth & all other ingredients.
  • Step #4 Simmer on low for 2-3 hrs or until beef is tender.
  • Step #5 Add tortellini.
  • Step #6 Simmer for 5 mins, then turn off heat & let this stand, covered, for at least 30-45 mins.
  • Step #7 Tortellini will cook in the hot broth.
  • Step #8 Serve with crusty bread.
