Ethiopian Lentils With Berebere Spice Mix Recipe

Ingredients
  • 1 tsp black peppercorns or freshly ground peppercorns .
  • fresh ground black pepper .
  • 1 tsp cardamom seeds (shell off husks) or cardamom powder .
  • 8 whole cloves or ground cloves .
  • 1 tsp fenugreek seeds (or powder) .
  • 1 lb lentils .
  • 6 c water or vegetable broth .
  • 1 tsp coriander seeds (or powder) .
  • 2 red onions, sliced .
  • 1 tsp salt .
  • BEREBERE SPICE MIX (use 2 tbsps) .
  • 5 tsps red pepper flakes or crumbled dried red peppers .
  • 3 tbsps sweet paprika (can use hot) .
  • 2 garlic cloves, minced (or more) .
  • 6 c mild green chilies, roasted peeled, seeded & sliced* (See note) .
  • 1/2 tsp cinnamon .
  • 2 tsps cumin seeds or powdered cumin .
  • 1/2 tsp whole allspice (or ground) .
  • 1 tbsp grated fresh gingerroot (or 1/2 tsp dried) .
  • 1 tsp turmeric

Directions
  • Step #1 LENTILS:.
  • Step #2 Bring lentils & broth to boil & let simmer 10 mins.
  • Step #3 Add chiles, onion, garlic, & Berebere spices.
  • Step #4 Cook covered for another 30 mins, until most of liquid is absorbed.
  • Step #5 Serve with ground black pepper to taste.
  • Step #6 For a vegetarian meal, these lentils are good with a dollop of yogurt, brown rice & sliced tomatoes.
  • Step #7 BEREBERE SPICE MIX:.
  • Step #8 Toast all the seeds & whole cloves in a small frying pan for 2 mins, stirring constantly (open window or turn on the stove vent--it can smoke).
  • Step #9 Grind the spices in a spice grinder.
  • Step #10 If you are using pre-ground spices, ignore & go on to the next step.
  • Step #11 Mix all remaining ingredients.
  • Step #12 Place in a tightly covered container & put in the fridge.
  • Step #13 This mixture can used with many combinations of legumes, rice or vegetables.
  • Step #14 NOTE: *OR: 1 bell pepper sliced + 14-oz can sliced green chiles.
  • Step #15 NOTE TWO : There are two ways to make this berebere spice mix - with whole spices that you grind, or with powdered versions of the spices.
  • Step #16 The first way gives you a more powerful flavor, but it may be more practical the second way, particularly if you don't have a spice grinder.
  • Step #17 Yield: 6 to 10 servings.
