Step #4 Cook covered for another 30 mins, until most of liquid is absorbed.

Step #6 For a vegetarian meal, these lentils are good with a dollop of yogurt, brown rice & sliced tomatoes.
Step #7 BEREBERE SPICE MIX:.
Step #8 Toast all the seeds & whole cloves in a small frying pan for 2 mins, stirring constantly (open window or turn on the stove vent--it can smoke).
Step #9 Grind the spices in a spice grinder.
Step #10 If you are using pre-ground spices, ignore & go on to the next step.

Step #12 Place in a tightly covered container & put in the fridge.

Step #16 The first way gives you a more powerful flavor, but it may be more practical the second way, particularly if you don't have a spice grinder.
