Steamed Lemon Catfish With Vegetables And Rice Recipe

Ingredients
  • 1 (16 oz) package frozen stir fry vegetables .
  • 1 tbsp lemon juice .
  • 1 (4 1/3 oz) box uncle ben's oriental fried rice .
  • 2 tbsps butter .
  • 2 c water .
  • 1 lb catfish fillets, thawed if frozen (about 1/2 inch thick) .
  • 2 tbsps fresh parsley or 1 tsp dried parsley .
  • 1/2 tsp lemon-pepper seasoning

Directions
  • Step #1 In a large skillet, melt the butter & saute the rice until golden brown.
  • Step #2 Stir in the water & seasoning packet, heat until boiling.
  • Step #3 Cover up, reduce the heat, & let simmer 10 mins.
  • Step #4 Add the frozen vegetables & heat till boiling, stirring every once in awhile.
  • Step #5 Place the fish fillets on top of the veggie-rice mixture.
  • Step #6 Sprinkle top with the lemon-pepper seasoning, lemon juice, & parsley.
  • Step #7 Reduce the heat & cover; let steam about 10 mins or until the fish flakes when forked & the vegetables are tender.
