Mushroom And Potato Chowder Recipe

Ingredients
  • 1 c sliced celery .
  • 1 c light cream .
  • 1/2 tsp pepper .
  • 1/2 c sliced carrots .
  • 1/4 c grated parmesan cheese .
  • 2 tbsps all-purpose flour .
  • 1 lb mushrooms .
  • 1/2 c sliced onions .
  • 1 c sliced peeled potatoes .
  • 1/4 c butter or margarine .
  • 1 tsp salt .
  • 3 c water

Directions
  • Step #1 In a large kettle, sauté onion in butter until tender Add flour, salt & pepper; stir this to make a smooth paste.
  • Step #2 Gradually add water, stirring constantly.
  • Step #3 Bring to a boil.
  • Step #4 Cook & stir 1 min.
  • Step #5 Add the mushrooms, celery, potatoes, & carrots.
  • Step #6 Reduce heat.
  • Step #7 Cover up & let simmer for 30 mins or until vegetable are tender.
  • Step #8 Add cream & parmesan cheese.
  • Step #9 Remove 1 c of chowder & puree, then replace this in pot.
  • Step #10 Heat thoroughly & serve.
