Thai Green Curry Recipe

Ingredients
  • 1 tbsp fresh lime leaves, finely sliced .
  • mixed vegetables, eg broccoli, Cauliflour, Zuchini, Capiscum .
  • 500 g chicken thigh fillets, Diced .
  • 1/2 (4 oz) can green curry paste (Maestri Brand) .
  • 3 tbsps fish sauce .
  • 3 (13 1/2 oz) cans coconut milk .
  • 5 Japanese eggplants .
  • 1 tbsp sugar .
  • 100 g basil leaves .
  • 3 red chili peppers, Sliced

Directions
  • Step #1 Place 1/2 tin of coconut milk into saucepan & add green curry paste.
  • Step #2 Stir well until the paste is cooked.
  • Step #3 Add Chicken & stir for a few mins.
  • Step #4 Add the remining coconut milk & bring to the boil.
  • Step #5 Add vegies, then add fish sauce, sugar & lime leaves.
  • Step #6 Bring to the boil until cooked.
  • Step #7 Test for flavour then add basil & chilli.
