Mock Matzo / Gluten-free Non-gebrokts Matzah Crackers Recipe

Ingredients
  • 2 tbsps vegetable shortening or solid coconut oil .
  • 1/4 tsp salt .
  • 1/3 c almond meal .
  • 1/3 c potato starch .
  • 3 tbsps warm water .
  • 1 tbsp flax seed meal

Directions
  • Step #1 Preheat oven to 450°F Cover up a cookie sheet with aluminum foil wrap.
  • Step #2 In a medium bowl, mix the dry ingredients.
  • Step #3 Mix shortening or coconut oil into the dry ingredients using your hands.
  • Step #4 Add water just a little bit at a time until the dough makes a ball & isn't too sticky.
  • Step #5 Knead well, making sure there are no big chunks of shortening.
  • Step #6 If the dough is sticky, add extra potato starch.
  • Step #7 Take walnut size pieces & press with your fingers onto the foil wrap-covered baking sheet until flat & thin.
  • Step #8 Smooth out edges, if desired, & use a fork to prick rows of holes.
  • Step #9 Cook for 10 mins, watching carefully to make sure they don't get overdone.
  • Step #10 You should underbake them slightly, rather than overbaking.
  • Step #11 Remove from oven as soon as the edges become slightly brown - The top should still be white.
