Greek Chicken Soup With Feta Cheese Recipe

Ingredients
  • 1/4 c olive oil .
  • 1/4 tsp celery salt .
  • 2 tbsps white sambuca liqueur .
  • 2 quarts chicken broth .
  • 2 medium carrots, sliced .
  • 1 lemon, juice of .
  • 1 tsp sliced fresh garlic .
  • 8-10 tbsps crumbled feta cheese (to garnish) .
  • 2 dashes hot pepper sauce .
  • 3 c washed & sliced fresh spinach .
  • 1/4 tsp white pepper .
  • 2 c shredded cooked chicken .
  • 2 c cooked wild rice .
  • 1 small red onion, sliced .
  • 1 red bell pepper, sliced .
  • 1/2 tsp crushed peppercorns

Directions
  • Step #1 In 4-quart saucepan, carrots, saute onion, bell pepper & garlic in oil over med-heat/flame until vegetables are tender.
  • Step #2 Add Sambuca & lemon juice & saute 5 mins.
  • Step #3 Add broth, chicken, peppercorns, hot pepper sauce, white pepper, celery salt & spinach.
  • Step #4 Simmer 20 mins.
  • Step #5 Add cooked rice.
  • Step #6 Before serving, sprinkle each serving with about 1 tbsp cheese.
