Pasta With Lima Beans And Swiss Chard Recipe

Ingredients
  • 3/4 c prosciutto or ham, sliced .
  • 1 1/2 c frozen lima beans, thawed .
  • 6 garlic cloves, thickly sliced .
  • 1/2 onion, sliced .
  • 3 quarts water .
  • 1 lb penne or spaghetti .
  • 1 1/2 c chicken stock .
  • 3 tbsps olive oil .
  • 1/4 tsp red pepper flakes .
  • 3 c swiss chard or spinach, thinly sliced .
  • 1/4 c dry white wine .
  • 1/4 c parmigiano-reggiano cheese, freshly grated .
  • 1/4 tsp black pepper .
  • 1/3 c whipping cream .
  • 2 tbsps fresh Italian parsley, sliced .
  • 3/4 tsp salt

Directions
  • Step #1 Bring the water to a boil In a large-ish pot.
  • Step #2 Heat the olive oil In a large-ish saute pan set on high heat until sizzling, about 2 mins.
  • Step #3 Add the garlic, onion, parsley, red pepper flakes, lima beans & prosciutto or ham.
  • Step #4 Reduce the heat to medium & cook this until the garlic begins to brown & the onion is soft, about 5-6 mins.
  • Step #5 Stir in the wine & boil until reduced by half, about 2 mins.
  • Step #6 Add the chicken stock, cream, salt & pepper & let simmer for 10-15 mins, until the sauce is slightly thickened.
  • Step #7 Add the Swiss chard or spinach leaves to the sauce about 2 mins before it's done, stirring well.
  • Step #8 While the sauce is simmering, add the pasta to the boiling water & cook this until just tender.
  • Step #9 Drain the pasta well & return it to the pot.
  • Step #10 Pour the sauce over the pasta & cook over med-heat/flame, stirring constantly, for 3 mins.
  • Step #11 Remove the pan from the heat, stir in the cheese & serve.
