Creamy Chicken Tortilla Soup Recipe

Ingredients
  • 1 (16 oz) can refried beans, non-fat .
  • 2 (14 1/2 oz) cans chicken broth .
  • shredded monterey jack cheese .
  • 1 1/2 c cooked chicken breasts, shredded (can use more or less) .
  • 1/2 c corn (fresh, frozen or canned) .
  • 2 (14 1/2 oz) cans Rotel tomatoes & chilies .
  • corn tortilla strips or chips .
  • 2 tsps fresh cilantro, sliced

Directions
  • Step #1 Combine tomatoes, broth, beans & corn in medium saucepan.
  • Step #2 Stir together & bring to a boil.
  • Step #3 Reduce & bring to a simmer, add chicken & heat through.
  • Step #4 Turn off heat & stir in the cilantro.
  • Step #5 Top each bowl of soup with cheese & crushed tortilla chips.
