Creamy Chicken Tortilla Soup Recipe

Ingredients

1 (16 oz) can refried beans, non-fat .
2 (14 1/2 oz) cans chicken broth .
shredded monterey jack cheese .
1 1/2 c cooked chicken breasts, shredded (can use more or less) .
1/2 c corn (fresh, frozen or canned) .
2 (14 1/2 oz) cans Rotel tomatoes & chilies .
corn tortilla strips or chips .
2 tsps fresh cilantro, sliced

Directions

Step #1 Combine tomatoes, broth, beans & corn in medium saucepan.
Step #2 Stir together & bring to a boil.
Step #3 Reduce & bring to a simmer, add chicken & heat through.
Step #4 Turn off heat & stir in the cilantro.
Step #5 Top each bowl of soup with cheese & crushed tortilla chips.
