Banana Bourbon French Toast Recipe

Ingredients
  • 2 tbsps vanilla .
  • SAUCE .
  • 8 slices thick white bread (I use Texas Toast) .
  • 1/4 tsp salt .
  • 2 tbsps butter .
  • BATTER .
  • 1/2 c cream (you may sub in half & half) .
  • 6 eggs .
  • 4 bananas, sliced .
  • 1 c brown sugar .
  • 1/2 c bourbon

Directions
  • Step #1 To make sauce: In a small pan, melt butter & brown sugar over med-heat/flame; carefully add bananas & let simmer for 2 mins.
  • Step #2 Remove from stove & add bourbon; return to flame & continue simmering an extra 2 mins.
  • Step #3 Cover up & keep warm until ready to use.
  • Step #4 To make batter: In a large bowl, whisk eggs & salt.
  • Step #5 Add vanilla.
  • Step #6 Pour in cream, continuing to whisk until well mixed.
  • Step #7 Melt 1 to 2 tbsps butter In a large-ish frying pan over medium-high heat.
  • Step #8 Dip each bread slice in batter & cook each side until golden brown.
  • Step #9 Repeat with remaining bread slices.
  • Step #10 Transfer 2 bread slices to individual plates & top this with banana slices & sauce.
  • Step #11 Serve with maple syrup or powdered sugar.
