Step #1 Preheat the oven to 325°F.
Step #2 In a mixing bowl, vigorously whisk the eggs, yolks, & sugar together.
Step #3 When the mixture is thoroughly mixed, whisk in the lemon juice, then the cream.
Step #4 Pour the mixture through a fine-mesh strainer.
Step #5 Add the lemon zest.
Step #6 Pour the mixture into 8 6-oz.
Step #7 custard c or ramekins.
Step #8 Place them in a baking pan & add enough hot water to come halfway up the sides of the c.
Step #9 Cover up the pan loosely with foil wrap & bake this until the custard is just set, 40 to 45 mins.
Step #10 The custard should still be soft in the center when lightly shaken.
Step #11 (It will continue to set as it cools.
Step #12 ).
Step #13 Remove from the baking pan & cool.
