Lemon Pots De Creme Recipe

Ingredients
  • 1 tsp lemon zest, minced, about 1 lemon .
  • 8 egg yolks .
  • 2 whole eggs .
  • 1 1/4-1 1/2 c sugar .
  • 1 c fresh lemon juice, about 6 to 8 lemons .
  • 2 1/2 c heavy cream

Directions
  • Step #1 Preheat the oven to 325°F.
  • Step #2 In a mixing bowl, vigorously whisk the eggs, yolks, & sugar together.
  • Step #3 When the mixture is thoroughly mixed, whisk in the lemon juice, then the cream.
  • Step #4 Pour the mixture through a fine-mesh strainer.
  • Step #5 Add the lemon zest.
  • Step #6 Pour the mixture into 8 6-oz.
  • Step #7 custard c or ramekins.
  • Step #8 Place them in a baking pan & add enough hot water to come halfway up the sides of the c.
  • Step #9 Cover up the pan loosely with foil wrap & bake this until the custard is just set, 40 to 45 mins.
  • Step #10 The custard should still be soft in the center when lightly shaken.
  • Step #11 (It will continue to set as it cools.
  • Step #12 ).
  • Step #13 Remove from the baking pan & cool.
