Lemon Puckers Recipe

Ingredients
  • 1 c butter, softened .
  • 1 c finely sliced walnuts .
  • 1 c sugar .
  • 1 egg yolk .
  • 3 tbsps lemon juice (about 3 lemons) .
  • 1/2 tsp grated lemon rind .
  • 3/4 c sifted confectioners' sugar .
  • 2 1/2 c all-purpose flour .
  • 1/2 tsp salt .
  • 3 oz cream cheese

Directions
  • Step #1 Cream the butter & cream cheese.
  • Step #2 Add the sugar & then the egg yolk.
  • Step #3 Add the lemon rind & mix well.
  • Step #4 Mix the salt with flour & add in small amounts to the butter-sugar mixture, mixing well after each addition.
  • Step #5 Add the walnuts & put in the fridge the dough for 2 hrs.
  • Step #6 When the dough is ready to bake, form it into three logs, each approximately 6 inches long, & flatten the logs slightly.
  • Step #7 Cut 12 1-by-3-inch ovals from each log.
  • Step #8 Bake the cookies on a lightly greased cookie sheet at 325F for 18 to 22 mins, until they are lightly browned.
  • Step #9 Cool the cookies on racks & glaze with a mixture of the confectioners' sugar & lemon juice.
