Poached Peaches In Champagne Recipe

Ingredients
  • 1 c romance whipped cream, see recipe below .
  • 1/2 c heavy whipping cream .
  • 2 large ripe peaches, preferably white .
  • 2 tsps vanilla extract .
  • 2 c dry champagne .
  • 2 large mint leaves (to garnish) .
  • 3 tbsps powdered sugar .
  • 3 large strawberries .
  • 2 tbsps powdered sugar .
  • 1/2 c maple syrup .
  • 1/4 medium lemon, juice of .
  • 1/2 small vanilla bean

Directions
  • Step #1 Make a very light incision all around peach skins.
  • Step #2 Plunge the peaches briefly into boiling water, then into cold water, & peel.
  • Step #3 Place in a shallow pan & douse with champagne.
  • Step #4 Add the syrup & vanilla bean.
  • Step #5 Bring to a slow boil over low heat/flame, & poach peaches at about 185°F, but do not allow to boil.
  • Step #6 If peaches are very ripe, they will be poached after 5 mins.
  • Step #7 Place peaches & syrup in a cool place, but do not put in the fridge.
  • Step #8 Drain peaches, reserving the poaching liquid.
  • Step #9 Wash strawberries, remove any leaves, & purée in a mixer or food processor/blender.
  • Step #10 Place in a bowl & stir sugar into the purée.
  • Step #11 Stir romance whipped cream into the strawberry purée & add lemon juice.
  • Step #12 Serve on round plates, or in glass dishes or small bowls.
  • Step #13 Line the bottom of the dishes with strawberry cream & arrange the cooled, but not chilled, peaches on top.
  • Step #14 Garnish each peach with a mint sprig.
  • Step #15 Serve the chilled poaching liquid separately in a sauce boat.
  • Step #16 ROMANCE WHIPPED CREAM:.
  • Step #17 Using a wire whisk or electric mixer, beat heavy cream over ice cubes in a chilled mixing bowl, just until cream thickens.
  • Step #18 When peaks start to form, add sugar & vanilla.
  • Step #19 Then whip to the desired consistency.
  • Step #20 Yield: 1 1/4+ c.
