Pasta Puttanesca Recipe

Ingredients
  • 1 lb pasta, cooked, I like noodles with this, spaghetti, capellini, spaghettini, spaghettoni, linguini, fettucci .
  • 12 black olives, crushed off the pit & sliced -get good ones, not bland, boring canned ones .
  • 2-8 garlic cloves, -depending on your garlic affection. i like lots .
  • 1 (32 oz) can whole tomatoes, sliced .
  • 3 leaves fresh basil, chiffonade .
  • 1 (2 oz) can anchovy fillets or 2-3 anchovy fillets .
  • 1/4 c sliced Italian parsley .
  • red chili pepper flakes .
  • 2 tbsps extra virgin olive oil .
  • 1 tbsp capers, heaping .
  • parmesan cheese or romano cheese or grana padano, for sprinking on top if you like

Directions
  • Step #1 Heat a large skillet over med-heat/flame & add the olive oil, garlic, anchovies, & crushed pepper.
  • Step #2 Saute until the anchovies dissolve into the oil & the garlic is tender.
  • Step #3 This only takes a few mins.
  • Step #4 Add the tomatoes, olives, & capers.
  • Step #5 Simmer sauce a few mins until slightly thickened (about 6-8 min or so) & add parsley & basil.
  • Step #6 *Note* If using fresh tomatoes simmer the sauce longer at this point until tomatoes have cooked down.
  • Step #7 Taste for salt & add a bit of fresh black pepper.
  • Step #8 Toss sauce with pasta & serve.
  • Step #9 Sprinkle top cheese on top.
