Ham-stuffed New Potatoes Recipe

Ingredients
  • 15 new potatoes (about 1 1/2 lbs) .
  • fresh parsley (for garnish) .
  • 1/4 c reduced-fat cream cheese .
  • 1 tbsp Dijon mustard .
  • 1 c cooked ham (lean, sliced) .
  • 1/3 c part-skim ricotta cheese .
  • 1 tbsp onions, minced

Directions
  • Step #1 Arrange potatoes in a steamer basket over boiling water; cover & steam 15 to 20 mins or until tender.
  • Step #2 Remove potatoes from steamer; cool.
  • Step #3 Combine ham & next four ingredients; set aside.
  • Step #4 Scoop out centers of potatoes, using a melon-ball scoop or other small spoon.
  • Step #5 You may want to reserve pulp for another use.
  • Step #6 Spoon ham mixture evenly into potatoes.
  • Step #7 Garnish with parsely sprigs.
