Zucchini Carrot Soup Recipe

Ingredients
  • 1/4 c butter or margarine .
  • 2 c water .
  • 3 c zucchini, unpeeled & grated .
  • 1 c milk .
  • 3/4 c onions, sliced .
  • 1 c carrots, grated .
  • 1/4 c flour .
  • 1 c monterey jack cheese .
  • 1/4 tsp pepper .
  • 1 tsp salt

Directions
  • Step #1 Melt butter in a heavy saucepan.
  • Step #2 Add zucchini, carrot & onion.
  • Step #3 Saute until onion is soft & clear.
  • Step #4 Sprinkle top with flour & stir well.
  • Step #5 Add water, milk, salt & pepper.
  • Step #6 Heat & stir until thickened, about 5 mins.
  • Step #7 Puree soup in batches in mixer.
  • Step #8 Return to pot.
  • Step #9 Add cheese.
  • Step #10 Stir to melt.
  • Step #11 Serve.
