Hot Chicken Curry Recipe

Ingredients
  • 5 inches cinnamon sticks, broken up .
  • 3 tsps salt .
  • 2 tsps turmeric .
  • 4 bay leaves .
  • 3 tsps ground cumin .
  • 2 tsps garam masala .
  • 1/2 lb onions, sliced .
  • 4 oz fresh ginger, grated .
  • 1/2 tsp black pepper, ground .
  • 12 oz ghee (clarified butter) .
  • 10 green cardamoms, open at one end .
  • 4 lbs skinless chicken, boned & cubed .
  • 8 garlic cloves, crushed .
  • 1 tsp hot chili powder .
  • 1/2 pint yogurt .
  • 10 cloves .
  • 1 pint water

Directions
  • Step #1 Melt the ghee In a large-ish heavy pan, & fry half of the onions till golden.
  • Step #2 Liquidise the ginger garlic & the rest of the onions with the water.
  • Step #3 Add the liquid to the pan of fried onions & cook for 10 mins.
  • Step #4 Now add all of the spices to the pan & cook for a further 10 mins.
  • Step #5 Add the chicken & yogurt, cook slowly till the chicken is very tender.
  • Step #6 Serve with rice, dhal & a cooling side dish.
