Oatmeal Cookies With Apricots And Pistachios Recipe

Ingredients
  • 3 c old fashioned oats (not instant) .
  • 1 c dried apricots, cut into raisin-size pieces .
  • 1 c unsalted pistachio nuts, sliced .
  • 1/2 c granulated sugar .
  • 1 c light brown sugar, firmly packed .
  • 1 tsp vanilla extract .
  • 1 c unsalted butter, melted & cooled slightly .
  • 1/2 tsp salt .
  • 1 1/2 c flour .
  • 1/2 tsp ground cinnamon .
  • 1 tsp baking soda .
  • 2 large eggs .
  • 1/8 tsp ground cloves

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Combine flour, baking soda, salt, cinnamon & cloves in a medium-size bowl; set aside.
  • Step #3 Combine the butter & sugars In a large-ish mixing bowl & beat with an electric mixer on medium speed until well mixed.
  • Step #4 Add the eggs & vanilla & beat until smooth.
  • Step #5 Beat in the flour mixture until just mixd & stir in the oats, apricots & pistachios.
  • Step #6 Cover up & leave bowl in the refrigerator for 10 mins (or up to 6 hrs) to let the dough firm up.
  • Step #7 Drop the dough by heaping tbspfuls onto ungreased baking sheets, leaving about 3 inches between each cookie.
  • Step #8 Bake cookies until they're golden around the edges but still soft on top, about 15-17 mins.
  • Step #9 Let them stand on the baking sheet for 5 mins, then transfer them with a metal spatula to a wire rack to cool completely.
