8 (6 oz) filet mignon, about 6 oz each (or other good steaks) .
1 c gorgonzola, crumbled (about 4 oz)
Directions
Step #1 Heat 2 tbsps olive oil in large heavy skillet over med-heat/flame; add mushrooms & saute until soft, about 4 mins.
Step #2 Add garlic & stir for a min; add whipping cream & bring to a boil.
Step #3 Reduce heat to medium & simmer until the sauce thickens, about 4 mins; stir in the cheese & peppers & season to taste with salt & pepper.
Step #4 Sprinkle top steaks with salt & freshly ground pepper.
Step #5 Heat remining oil in another large, heavy skillet; cook steaks until brown on both sides & cooked to desired doneness, about 5 mins per side for medium rare.
