Steak With Gorgonzola Sauce Recipe

Ingredients
  • 2 tsps minced chipotle chiles in adobo (from canned chipotles in adobe) .
  • 3 garlic cloves, minced .
  • 3 tbsps olive oil, divided .
  • 1/2 lb fresh shiitake mushrooms, stemmed & sliced .
  • 1 1/2 c 35% cream .
  • 8 (6 oz) filet mignon, about 6 oz each (or other good steaks) .
  • 1 c gorgonzola, crumbled (about 4 oz)

Directions
  • Step #1 Heat 2 tbsps olive oil in large heavy skillet over med-heat/flame; add mushrooms & saute until soft, about 4 mins.
  • Step #2 Add garlic & stir for a min; add whipping cream & bring to a boil.
  • Step #3 Reduce heat to medium & simmer until the sauce thickens, about 4 mins; stir in the cheese & peppers & season to taste with salt & pepper.
  • Step #4 Sprinkle top steaks with salt & freshly ground pepper.
  • Step #5 Heat remining oil in another large, heavy skillet; cook steaks until brown on both sides & cooked to desired doneness, about 5 mins per side for medium rare.
  • Step #6 Pour sauce over steaks before serving.
