Ingredients
1/4 c lemon juice .
3/4 c red wine (burgundy works well) .
1/2 tsp dried marjoram .
1/2 c onions, sliced .
1 tbsp Worcestershire sauce .
1/2 tsp dried rosemary .
1/4 c water .
1/4 tsp garlic salt .
4-6 lbs prime rib roast
Directions
Step #1 Mix together marinade & pour over meat in a shallow pan, dish, or bag.
Step #2 Refrigerate for 6-24 hrs, turning every once in awhile.
Step #3 Before cooking, discard marinade & let meat sit at about room temp for 1 hr.
Step #4 Preheat oven to 375 degrees.
Step #5 Insert meat thermometer (don't touch bone) & cook for 1 hr, fat side up.
Step #6 Turn off oven & keep meat in oven for 4 hrs.
Step #7 DO NOT OPEN OVEN AT ANY TIME DURING COOKING PROCESS! 1 hr before serving, turn oven back on to 375 degrees & cook for 45 mins.
Step #8 Remove from oven--thermometer should read 140-150 degrees for rare to medium rare.
Step #9 Let meat sit for 15 mins before carving.
Step #10 This cooking method works with any size roast, but marinade should be increased for larger roasts.
