Quinoa Matsutake Pilaf Recipe

Ingredients
  • sea salt or Mrs. Dash seasoning mix, see note .
  • 1/4 tsp red pepper flakes .
  • 2 c vegetable stock or mushroom stock .
  • 1 c finely sliced matsutake mushrooms .
  • 2 stalks celery, finely sliced .
  • 1 tsp dried mustard .
  • 2 tbsps vegetable oil .
  • 2 c quinoa .
  • 1 medium onion, finely sliced .
  • 1 red bell pepper, finely sliced .
  • 1 garlic clove, pressed .
  • 1/2 tsp dried oregano .
  • fresh ground pepper

Directions
  • Step #1 Heat the oil over med-heat/flame then add the onion.
  • Step #2 Saute it until soft then stir in the garlic & cook.
  • Step #3 Do NOT allow them to brown.
  • Step #4 Pour in stock then add the next three ingredients & bring to a boil.
  • Step #5 Reduce the heat to a simmer & stir in the the quinoa.
  • Step #6 Stirring simmer for 15 mins then add the rest of the ingredients.
  • Step #7 Cover up.
  • Step #8 Simmer 20 mins.
  • Step #9 If needed add more stock or water a tbsp or two at a time before the 20 mins are up.
  • Step #10 If it is moist at the end of 20 mins cook 5 more mins.
  • Step #11 Taste & add salt & pepper to taste.
  • Step #12 Note the Mrs.
  • Step #13 Dash I used was the tomato & garlic mix.
  • Step #14 Tabletop, original, garlic & herb as well as onions & herb should also work.
  • Step #15 They pick up the flavors that are in the mix already.
