Delicate Lemon Pound Cake Recipe

Ingredients
  • 2 1/2 c sugar
  • 1 c butter, softened
  • 1 tsp vanilla extract
  • confectioners' sugar
  • 3/4 c lemon-lime soda
  • 1/2 c shortening
  • 5 eggs
  • 3 c all-purpose flour
  • 1 tsp lemon extract

Directions
  • Step #1 In a large mixing bowl, cream the butter, shortening & sugar until light & fluffy, about 5 mins.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Stir in extracts.
  • Step #4 Add flour alternately with soda, beating just until mixd.
  • Step #5 Pour into a greased & floured 10-in.
  • Step #6 fluted tube pan (pan will be full).
  • Step #7 Bake at 325F degrees F for 1-1/4 hrs or until a toothpick inserted near the center comes out clean.
  • Step #8 Cool for 10-20 mins before removing from pan to a wire rack to cool completely.
  • Step #9 Dust with confectioners' sugar.
