Low Fat Coronation Chicken Recipe

Ingredients
  • spray olive oil .
  • optional canned fruit (optional) .
  • 1-2 tbsp curry powder .
  • 4 tbsps mango chutney or apricot jam .
  • 1 c slivered almonds .
  • 1/2 lemon, juice of .
  • 4 chicken breasts, braised in stock .
  • 4 tbsps low-fat sour cream .
  • 1/2 pint low-fat mayonnaise .
  • 1 1/2 tsps tomato puree .
  • 1 medium sized onion, finely sliced .
  • 1/2 pint chicken stock

Directions
  • Step #1 Braise the chicken breast in the stock, & allow this to cool.
  • Step #2 Once cold set aside 1/4 pint of the stock to use for sauce later.
  • Step #3 Cut the chicken into bite size portions (dice).
  • Step #4 Spray the base of a frying pan with a little olive oil, to prevent sticking.
  • Step #5 Dry fry the onions, till soft, not browned.
  • Step #6 Stir in the curry powder according to taste & cook for another 2 mins.
  • Step #7 Add 1/4 pint of the stock, tomato puree, lemon juice & chutney/jam.
  • Step #8 Allow to cool & stir in the the mayonaise & cream.
  • Step #9 Dry fry the almonds & stir in the at the end.
  • Step #10 wonderful served as part of a cold buffet or in sandwiches.
  • Step #11 If really want to go to town with this, add cashews nuts & small pieces of tinned fruit, like pineapple, peaches or manderins.
