Pasta Primavera Recipe

Ingredients
  • 2 (10 oz) packages each frozen choppen spinach (thawed & drained well) .
  • 1/4 tsp ground pepper .
  • 1/2 c all-purpose flour .
  • 2 c sliced fresh mushrooms .
  • olive oil .
  • 2 c sliced fresh tomatoes (canned will do) .
  • 2 c chicken broth .
  • 2 c milk .
  • 1 (16 oz) package ziti pasta (or pasta of choice) .
  • 2 zucchini, cut into strips .
  • 2 red peppers, cut into strips .
  • 1/2 tsp nutmeg .
  • 1 c sliced scallions

Directions
  • Step #1 Cook pasta as directed & drain.
  • Step #2 Spoon into prepared 13x10x2 in baking dish (spray with olive oil).
  • Step #3 Saunted veggies in oil for 3 or 4 mins.
  • Step #4 Add tomatoes.
  • Step #5 Spoon all over pasta.
  • Step #6 Place flour in the skillet.
  • Step #7 Blend in milk.
  • Step #8 Add broth, nutmeg & pepper.
  • Step #9 Cook & whisk over med-heat/flame until mixture thickens.
  • Step #10 Add spinach.
  • Step #11 Pour over vegetables.
  • Step #12 Cover up.
  • Step #13 Bake at 350 degrees for 40-45 min.
