Enoki Mushroom Egg And Lemon Soup W
Ingredients
4 lemon wedges .
fresh ground white pepper .
6 slices bacon, strips rindless smokey fatty .
1 lb fresh enoki mushrooms
Directions
Step #1 Cut the root off of the enokitake mushrooms.
Step #2 [about 3/4 inch from end].
Step #3 Do NOT separate stems.
Step #4 Cut bacon lenghtwise if you need to cut it.
Step #5 Divide mushrooms into 12 bunches.
Step #6 Place one bunch near end of bacon strip.
Step #7 You should see 1 to 1/2 inches of the mushroom at end of bacon.
Step #8 Carefully roll the strip.
Step #9 Tuck stray short stems inside roll.
Step #10 Slide the bacon up slightly to cover about 1 1/2 inch of the mushrooms [it is going to lap over] Secure ends with toothpick.
Step #11 Repeat.
Step #12 Preheat Grill or broiler to highest heat.
Step #13 Place roll on oiled or pammed wire rack.
Step #14 Grill until bacon is crisp & mushrooms start to burn.
Step #15 About 10 to 13 mins.
Step #16 Remove rolls & place on board.
Step #17 Use a fork & knife, chop each roll in half in middle of bacon belt.
Step #18 Arrange the top half standing upright & the bottom half lying next to it.
Step #19 Serve with lemon & white pepper.
Step #20 You can sub chives in place of the mushrooms.
Step #21 You can also use garlic shoots when they are 4 1/2 inches long.
