Pancakes Bokolgny Style Recipe

Ingredients
  • 1 tbsp freshly rendered lard .
  • Garnish .
  • The Pancakes .
  • 1 pinch salt .
  • 3 eggs .
  • peanut oil, for greasing pan .
  • salt & freshly ground black pepper .
  • 1 c all-purpose flour .
  • 1 c water .
  • 1/2 lb boneless skinless chicken breasts, cut into 1-inch cubes .
  • The Filling .
  • 3 c paprika gravy (see recipe in this cookbook) .
  • 2 c chicken stock .
  • 1/2 lb veal stew meat, cut into 1-inch cubes .
  • 1 c sour cream

Directions
  • Step #1 The Pancakes:.
  • Step #2 Place the eggs in a mixer.
  • Step #3 Add the water, flour, & salt.
  • Step #4 Blend until smooth.
  • Step #5 Over a medium burner, heat a 10-inch Silverstone-lined slope-sided frying pan.
  • Step #6 This will give you an 8-inch round pancake.
  • Step #7 Oil the pan with a bit of the peanut oil & pour in about 3 tbsps of the batter.
  • Step #8 Do this quicklyand tilt the pan so that the batter covers the pan evenly.
  • Step #9 Cook on one side only, & only until the top is dry.
  • Step #10 The pancakes should not be at al browned or too dry, so be sure that the heat is not too high.
  • Step #11 Stack the cooked pancakes as you cook them, separating them with waxed paper.
  • Step #12 The Filling:.
  • Step #13 Simmer the veal & chicken in the chicken stock until just cooked, about 15 mins.
  • Step #14 Strain the meat & save the stock for another dish.
  • Step #15 To make the filling, grind the meats fine in a meat grinder.
  • Step #16 Add 1/2 c of the Paprika Gravy & season this with salt & pepper.
  • Step #17 Heat a 10-inch frying pan & add the lard.
  • Step #18 Add the filling mixture to the pan & warm it over a low flame.
  • Step #19 In another 10-inch frying pan, warm the pancakes individually over a low flame.
  • Step #20 Place a warm pancake on a large plate & put about 1/3 c of filling in the center.
  • Step #21 Fold in the sides of the pancake & roll it up into a rectangle.
  • Step #22 Roll all of the pancakes.
  • Step #23 Place them, 4 at a time, in an oiled frying pan and, with the pan covered, barely toast the bottom of the pancake rolls.
  • Step #24 Keep cooked pancakes warm while making the rest.
  • Step #25 Serve on a warmed plated topped with the remaining Paprika Gravy, warmed, & a dollop of sour cream.
