Veal Scallopini With Grapes And Mushrooms Recipe

Ingredients
  • 1 lb button mushrooms, wiped clean & quartered .
  • 1/2 tsp pepper .
  • 2 tbsps unsalted butter .
  • 1 1/2 lbs veal cutlets (cut 1/4-inch thick about 10 pieces) .
  • 1/2 c flour .
  • 1/2 c marsala wine or sherry wine .
  • 1 large onion, sliced .
  • 1 c red seedless grapes, cut in 1/2 .
  • 2 garlic cloves, sliced .
  • 1 tsp italian seasoning .
  • 1 tsp garlic powder .
  • 2 c beef stock .
  • 4 tbsps olive oil .
  • 1 tsp salt

Directions
  • Step #1 Spice up veal with salt & pepper.
  • Step #2 Mix flour, garlic powder & Italian seasoning in a bowl; dust veal with the mixture; reserve the left over flour mixture.
  • Step #3 In a large hot frying pan heat 1/2 the butter & 1/2 the oil cook the veal 4 to 5 mins until golden brown, turning once.
  • Step #4 Remove from pan & keep warm.
  • Step #5 Add remaining butter & oil to skillet & cook mushrooms for 5 mins stirring all the time; add onions & cook for 3 more mins; add garlic cook 1 more min; till golden brown; add Marsala wine simmer 1 min.
  • Step #6 Sprinkle top the rest of the flour mixture over the mushrooms & onions stir in the well.
  • Step #7 Add beef stock, bring to boil & let simmer 2 to 3 mins.
  • Step #8 Return meat & any accumulated juices to the pan.
  • Step #9 Reheat 1 to 2 mins.
  • Step #10 Toss in the grapes just to coat.
  • Step #11 Serve veal topped with sauce & mushrooms & grapes.
