Apple-glazed Cornish Hens Recipe

Ingredients
  • 1/2 c apple juice .
  • 1 large lemon, juice & zest of, finely grated .
  • lemon slices, to garnish .
  • 2 tbsps clear honey .
  • 1 tbsp balsamic vinegar .
  • 4 (1 3/4 lb) rock cornish hens .
  • apples, slices to garnish .
  • 1/4 c butter, softened .
  • 1 dessert apple, quartered .
  • 2-3 sprigs flat leaf parsley, to garnish .
  • salt & freshly ground black pepper

Directions
  • Step #1 Place an apple quarter inside each hen, set the hens in a roasting pan, & make cuts in the flesh.
  • Step #2 Brush with the butter & sprinkle with salt & pepper.
  • Step #3 Mix together the remaining ingredients, except the garnish, & pour over the hens.
  • Step #4 Roast the hens in a preheated 375F oven for 11/4 hrs or until the juices run clear.
  • Step #5 Turn the hens 3-4 times during roasting, & baste well wiht the cooking juices.
  • Step #6 remove this from pan & let this stand, covered with foil wrap, for 10 mins.
  • Step #7 Skim off the excess fat from the cooking juices, & boil, place the pan on top of the stove, stirring, until slightly reduced.
  • Step #8 Arrange the hens on a warmed platter, garnish, & serve at once.
  • Step #9 Pass the cooking juices separately.
