Simple, Delicious, Low Sugar Oatmeal Raisin Cookies Recipe

Ingredients
  • 1/2 c non-hydrogenated margarine, softened (Earth Balance) .
  • 3/4 c white whole wheat flour (sub a quarter unbleached all purpose for a lighter cookie) .
  • 3/4 tbsp pure vanilla extract .
  • 1/2 c raisins .
  • 1 1/4 c organic old fashioned oats (instant works alright too) .
  • 1/2 tbsp cinnamon .
  • 3/4 tsp baking soda .
  • 1 dash nutmeg (optional, but gives more oomph) (optional) .
  • 1 dash salt (optional) .
  • 1 1/2 tsps Ener-G Egg Substitute (1 1/2 tsp Ener-G plus 2 tbsps warm water) .
  • 1/2 c brown sugar, packed .
  • 1/8 c raw sugar

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 In a mixing bowl, sift together the first set of ingredients.
  • Step #3 In another bowl, cream together the margarine & sugars, then add vanilla & egg replacer.
  • Step #4 Add the sugar mix to the flour mix & stir well.
  • Step #5 Fold in the oats & raisins until mixd.
  • Step #6 This batter will seem dry, but trust me, it's fine.
  • Step #7 Drop small spoonfuls onto an ungreased cookie sheet & bake for 10-12 mins.
