Red Leaf, Pear, And Walnut Salad Recipe

Ingredients
  • 1/4 c canola oil .
  • salt & pepper (optional) .
  • 4 tsps Dijon mustard .
  • 1/2 c apple juice .
  • 10 c red leaf lettuce, rinsed & well-drained & coarsely sliced .
  • 3 tbsps apple cider vinegar .
  • 1 tsp poppy seeds .
  • 1 tbsp honey .
  • 3 pears, cored, & sliced into 3/4-inch pieces (or slice, Try coring the pears by cutting in half & core with a melon baller) .
  • 2/3 c walnut pieces, toasted

Directions
  • Step #1 Add vinegar, mustard,oil,juice, & honey to food processor/blender or mixer & pulse until well-mixd.
  • Step #2 Stir in poppy seeds & add salt & pepper to taste, if desired.
  • Step #3 Reserve 1/4 c of dressing & set aside.
  • Step #4 Add lettuce & walnuts to (very!) large bowl & pour remaining dressing on top, & toss to coat well.
  • Step #5 (I would add the walnuts at the end; they tend to fall to the bowl's bottom.
  • Step #6 ).
  • Step #7 Divide lettuce among eight individual salad plates or borls.
  • Step #8 Add pears to large bowl & toss with 1/4 c dressing, or arrange on salads & drizzle with 1/4 c dressing.
  • Step #9 Spoon pears evenly on salads.
