Dilly Chicken Sandwiches Recipe

Ingredients
  • 8 (1/2-inch-thick) slices French bread
  • 4 (4 oz) boneless, skinless chicken breast halves
  • 4 tbsps cream cheese, softened
  • 3/4 tsp dried dill weed, divided
  • 2 tsps lemon juice
  • 4 lettuce leaves
  • 6 tbsps butter or margarine, softened, divided
  • 8 slices tomato
  • 1 garlic clove, minced

Directions
  • Step #1 Pound chicken to flatten evenly; set aside.
  • Step #2 In a skillet, melt 3 tbsps of butter; add garlic & 1/2 tsp dill.
  • Step #3 Add chicken; cook this until juices run clear.
  • Step #4 Remove & keep warm.
  • Step #5 Spread both sides of bread with remaining butter.
  • Step #6 In a skillet or griddle, grill bread on both sides until golden brown.
  • Step #7 In a small bowl, mix cream cheese, lemon juice & remaining dill; spread on one side of grilled bread.
  • Step #8 Place lettuce, chicken & tomato on four slices of bread; top this with remaining bread.
