Samosa Soup Recipe

Ingredients
  • 1 tsp cumin .
  • 1 tsp garam masala .
  • 4 oz frozen green peas .
  • 1/8-1/4 tsp cayenne pepper, depending on your preference .
  • 1 tbsp fresh cilantro, sliced .
  • 2 tbsps olive oil .
  • 4 tbsps plain yogurt .
  • 3 garlic cloves, crushed .
  • 8 oz potatoes, sliced .
  • 1 small onion, sliced .
  • 1 1/2 pints vegetable stock

Directions
  • Step #1 Heat oil In a large-ish saucepan & add the potatoes, garlic & onion.
  • Step #2 Saute over a low heat for 5 mins.
  • Step #3 Add the cayenne pepper, cumin, garam masala & cilantro.
  • Step #4 Stir well.
  • Step #5 Add the vegetable stock & bring mixture to a boil.
  • Step #6 Cover up the pan, reduce heat & let simmer for 20 mins.
  • Step #7 Add peas & continue to cook the soup for another 5 mins.
  • Step #8 Ladle into four individual serving bowls & spoon a tbsp of yogurt on top of each.
