Grilled Herbed Zucchini Halves Recipe

Ingredients
  • 1 tsp fresh rosemary, sliced .
  • 1 tsp salt .
  • 1/4 c red wine vinegar .
  • 2 tbsps shallots, sliced .
  • 1 tbsp fresh thyme, sliced .
  • 1 tsp fresh mint, sliced .
  • 2 quarts water .
  • 3/4 c extra-virgin olive oil .
  • 1 tbsp fresh oregano, sliced .
  • 2 tsps lemon rind, grated .
  • 2 small zucchini

Directions
  • Step #1 In a medium bowl, add the red wine vinegar & the shallots.
  • Step #2 Slowly whisk in the olive oil until it is thoroughly mixd.
  • Step #3 Add the lemon rind, thyme, oregano, rosemary, & mint; mix well.
  • Step #4 In a pot, bring the water to a boil.
  • Step #5 Add the salt & the zucchini & let simmer for 3 to 4 mins.
  • Step #6 Remove the zucchini from the water & allow it to cool.
  • Step #7 Slice the zucchini in half lengthwise.
  • Step #8 Coat the zucchini with the vinaigrette mixture.
  • Step #9 Cover up & put in the fridge for 1 hr.
  • Step #10 Preheat the grill or an oven broiler.
  • Step #11 Set the zucchini on the grill or beneath the broiler.
  • Step #12 You are only trying to reheat the zucchini, so do not let them stay on the grill or in the broiler for more than 3 to 5 mins.
  • Step #13 Serve as soon as possible.
  • Step #14 Exchanges Per Serving: 1/2 Vegetable, 2 Fat.
