Teriyaki Pork Kebabs (low Fat) Recipe

Ingredients
  • 1 1/4 lbs pork loin roast, cut into cubes .
  • 8 pieces red peppers, 8 cubes .
  • 1/4 c tamari .
  • Marinade .
  • 4 green onions, cut into 2 2-inch lengths .
  • 1 garlic, minced .
  • 1/4 inch piece fresh gingerroot, peeled & cut 1/4-inch thick .
  • Kebab Fruit & Vegetables .
  • 2 tbsps honey .
  • 8 shiitake mushrooms, stemmed .
  • 1/2 tsp sesame oil .
  • 8 pieces pineapples, 8 cubes .
  • 2 tbsps sherry wine

Directions
  • Step #1 Marinade: Combine tamari, sherry, honey, sesame oil, garlic & ginger root in a zip lock bag.
  • Step #2 Add pork cubes & toss to coat.
  • Step #3 Cover up & chill several hrs or overnight, turning pork cubes at least once.
  • Step #4 Remove pork from zip lock bag.
  • Step #5 Alternate pieces of pork, pineapple, mushroms, green onions & red pepper on metal skewers.
  • Step #6 Preheat grill.
  • Step #7 Place skewers on grill & cook covered for 8 - 9 mins, turing every 3 mins & brushing with marinade the last 6 mins.
