Sausage & Spinach Roll-up Recipe

Ingredients
  • 12 oz frozen spinach .
  • 4 oz shredded colby-monterey jack cheese, mix .
  • 4 oz shredded mozzarella cheese .
  • 1/2 lb ground sausage (pork, turkey, chicken, your call) .
  • 1 sheet frozen puff pastry .
  • 1 tsp olive oil

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Thaw the pastry sheet & the spinach.
  • Step #3 Squeeze as much water out of the spinach as you can.
  • Step #4 This is important.
  • Step #5 Place the pastry sheet on a length of cling wrap sufficient to fold back over.
  • Step #6 Roll out pastry sheet to insure the seams don’t separate.
  • Step #7 Spread a layer of the sausage over the pastry & fold the cling wrap back over the top.
  • Step #8 Use your rolling pin to even out & compress the sausage onto the pastry.
  • Step #9 Pull the cling wrap back & add a layer of spinach.
  • Step #10 Repeat the rolling with the cling wrap.
  • Step #11 Repeat with a layer of the cheese mix over the pastry.
  • Step #12 Preheat a cookie sheet in the oven.
  • Step #13 Using the cling wrap as a tool, much like a sushi rolling mat, form the pastry & toppings into a jelly roll log form.
  • Step #14 Slice the log into ¾ inch discs & place flat on the cookie sheet at 2 inch intervals.
  • Step #15 Bake for 25 mins, watching carefully after 15.
  • Step #16 Ovens vary.
