Coconut Cream Cake Recipe

Ingredients
  • 3/4 c flour .
  • 4 c half-and-half .
  • 1 c heavy cream .
  • Cake .
  • 2 tsps pure vanilla extract .
  • 3/4 c sugar .
  • 2 tsps pure vanilla extract .
  • Buttercream Frosting .
  • 3/4 tsp salt .
  • 1 egg yolk .
  • 1 pinch salt .
  • vegetable oil cooking spray .
  • 4 eggs .
  • 2 c sugar .
  • Coconut-Custard Filling .
  • 1/4 c butter .
  • 1 1/2 tsps cornstarch .
  • 3 c flour .
  • 4 c sweetened flaked coconut .
  • 4 c toasted sweetened flaked coconut .
  • 3 large eggs .
  • 1 c powdered sugar .
  • 1 c butter .
  • 14 oz canned unsweetened coconut milk .
  • 1 tsp pure vanilla extract .
  • 1 c butter

Directions
  • Step #1 For coconut custard filling: Beat eggs, flour,and sugar in large bowl.
  • Step #2 Place half & half, vanilla, & coconut in heavy large suacepan.
  • Step #3 Bring to simmer over med-heat/flame, stirring every once in awhile.
  • Step #4 Gradually whisk coconut mixture into egg mixture.
  • Step #5 Return to pan & whisk over med-heat/flame until mixture boils, about 6 mins.
  • Step #6 Remove from heat.
  • Step #7 Whisk in butter.
  • Step #8 Transfer to large bowl; press plastic wrap onto surface & chill until cold at least 3 hrs.
  • Step #9 For Cake: Preheat oven to 350°F Spray three eight inch cake pans with vegetable spray.
  • Step #10 Line bottoms of pans with parchment & spray the parchment.
  • Step #11 Sift flour, baking powder & salt into large bowl.
  • Step #12 Beat sugar & butter in large bowl until creamy about 5 mins.
  • Step #13 Add eggs 1 at a time mixing well after each addition.
  • Step #14 Beat in vanilla.
  • Step #15 Add flour mixture in 3 additions alternately with coconut milk in 2 additions.
  • Step #16 Divide batter between pans, smooth tops.
  • Step #17 Bake cakes until tester inserted into center comes out clean, about 25-35 mins.
  • Step #18 Cool cakes in pans on racks 5 mins.
  • Step #19 Turn cakes out onto racks; cool completely.
  • Step #20 Using serrated knife, cut each cake horizontally in half.
  • Step #21 Place cake halves on baking sheets in single layer & freeze 1 hr for easy assembly.
  • Step #22 For Buttercream; Whisk first 4 ingredients in heavy small saucepan.
  • Step #23 Cook over med-heat/flame until mixture just begins to boil.
  • Step #24 Transfer to small bowl, cover & chill about 2 hrs.
  • Step #25 Using electric mixer, sugar & salt in large bowl until fluffy, beat butter, about 7 mins.
  • Step #26 Gradually beat in cold vanilla base until smooth.
  • Step #27 To assemble:.
  • Step #28 Place 1 cake round on plate.
  • Step #29 Spread 1 c filling over.
  • Step #30 Repeat with 4 more cake layer & remaining filling.
  • Step #31 Top with remaining cake layer, pressing to adhere.
  • Step #32 Spread buttercream over sides & top of cake.
  • Step #33 Press toasted coconut onto top & sides of cake to cover.
