Emeril's Chili Recipe

Ingredients
  • 1 (4 oz) jar jalapenos .
  • cayenne .
  • 2 c sliced onions .
  • 1 c canned dark red kidney beans .
  • 1/4 c tomato paste .
  • 1 1/2 c grated monterey jack cheese .
  • salt .
  • 1 (8 oz) bag tortilla chips .
  • 4 tbsps water .
  • 2 lbs stew meat, cut into cubes .
  • 2 tbsps vegetable oil .
  • 2 tsps dried oregano .
  • 6 tbsps sour cream .
  • 2 tbsps sliced garlic .
  • 2 tbsps masa corn flour .
  • 8 c beef stock .
  • crushed red pepper flakes .
  • 1 tbsp chili powder .
  • 3 c crushed tomatoes .
  • 2 tsps ground cumin

Directions
  • Step #1 In a large saucepan, heat the vegetable oil.
  • Step #2 When the oil is hot, add the onions & saute for 3 to 5 mins, or until the vegetables start to wilt.
  • Step #3 Spice up with salt & cayenne.
  • Step #4 Stir in the stew meat, chili powder, cumin, crushed red pepper, & oregano.
  • Step #5 Brown the meat for 5 to 6 mins.
  • Step #6 Stir in the garlic, tomato paste, tomatoes, & beef stock.
  • Step #7 Bring the liquid up to a boil & reduce to a simmer.
  • Step #8 Simmer the liquid, stirring every once in awhile, partially covered for 1 1/2 hrs, or until the beef is tender.
  • Step #9 Skim off the fat every once in awhile.
  • Step #10 Mix the masa & water together.
  • Step #11 Slowly stir in the the masa slurry, add the beans, & continue to cook for 30 mins.
  • Step #12 Reseason this with salt & cayenne.
  • Step #13 Place a handful of the chips in each shallow bowl.
  • Step #14 Spoon the chili over the chips.
  • Step #15 Garnish with the grated cheese, sour cream & jalapenos.
