Cream Of Broccoli Soup Recipe

Ingredients
  • 1 c shredded mozzarella cheese
  • 1 c heavy cream
  • 1 stalk celery with leaves, sliced
  • 2 cubes chicken bouillon
  • 1 c milk
  • 3 tbsps minced onion
  • 2 pinches paprika
  • 3 tbsps butter
  • 1 head fresh broccoli
  • 3 tbsps all-purpose flour
  • 1 tsp salt
  • 1 tsp Worcestershire sauce

Directions
  • Step #1 Place broccoli in a medium saucepan with water to cover, bring to a boil, then reduce heat & let simmer until tender, 15 mins.
  • Step #2 Remove broccoli & reserve cooking water.
  • Step #3 In the same pan, melt butter over med-heat/flame.
  • Step #4 Cook onions & celery in butter until tender, 10 to 15 mins.
  • Step #5 Stir in flour, milk & cream.
  • Step #6 Dissolve bouillon in 2 c reserved broccoli water.
  • Step #7 Stir into soup.
  • Step #8 Spice up with Worcestershire, paprika & salt.
  • Step #9 Stir in cheese & cook 10 mins more.
