Cranberry Couscous Salad Recipe

Ingredients
  • 2 tsps Dijon mustard
  • 1 c water
  • 1 tbsp olive or canola oil
  • 1/2 c sliced seeded cucumber
  • 1/8 tsp pepper
  • 1/4 c slivered almonds, toasted
  • 1/4 c thinly sliced green onions
  • 3/4 c dried cranberries
  • 3/4 c uncooked couscous
  • 1/2 tsp salt
  • 1/2 c sliced carrots
  • 3 tbsps balsamic vinegar

Directions
  • Step #1 In a saucepan, bring water to a boil.
  • Step #2 Stir in couscous.
  • Step #3 Remove from the heat; cover & let this stand for 5 mins.
  • Step #4 Fluff with a fork.
  • Step #5 Cool for 10 mins.
  • Step #6 In a bowl, carrots, mix the couscous, cranberries, cucumber & green onions.
  • Step #7 In a small bowl, mix the vinegar, mustard, oil, salt & pepper.
  • Step #8 Pour over couscous mixture; mix well.
  • Step #9 Cover & put in the fridge.
  • Step #10 Just before serving, stir in the almonds.
