A Different Fluffy, Light And Moist Carrot Cake (very Low Fat) Recipe

Ingredients
  • For the cake .
  • 3/4 c whipping cream .
  • 1/2 c powdered sugar .
  • 2 tsps cinnamon .
  • 12 oz tender carrots, finely grated .
  • 3/4 c cornstarch .
  • 1 c sugar .
  • 5 eggs, whites & yolks separated .
  • 1 tbsp butter .
  • 1 lemon, juice & rind of, grated .
  • 1 pinch salt .
  • 4 oz cream cheese .
  • For the frosting

Directions
  • Step #1 Preheat oven to 370 F (190c).
  • Step #2 Grease a 9 inch pan.
  • Step #3 Beat egg whites until stiff & then slowly pour in 1/2 c of sugar, beating constantly.
  • Step #4 In another bowl, salt & cinnamon, beat the egg yolks & the remaining sugar then add lemon rind, lemon juice, beating continuously.
  • Step #5 Add in the carrots, corn starch & mix.
  • Step #6 Add the egg whites to the mix slowly & small amounts at a time mixing continuously in a top to bottom rotating movement.
  • Step #7 Pour the batter into the pan.
  • Step #8 Level the surface with a spatula (do not pressure it though & move very lightly).
  • Step #9 Bake for 35-40 mins or until toothpick inserted comes out clean & cake is golden.
  • Step #10 For frosting:.
  • Step #11 Whip the whipping cream until it thickens.
  • Step #12 In a separate bowl, mix the sugar & cheese until smooth.
  • Step #13 Add in the whipped cream.
  • Step #14 Frost cooled cake.
