Crisp Pork Medallions With Creamy Caper Sauce Recipe

Ingredients
  • 2/3 c plain yogurt (6 oz, preferably whole milk) .
  • For Sauce .
  • 1 tbsp finely sliced fresh flat-leaf parsley .
  • For Pork .
  • 3/4 c all-purpose flour .
  • 2 large eggs .
  • lemon wedges or watercress (optional) or other baby greens (optional) .
  • 1 tsp salt .
  • 2 tbsps drained bottled capers, finely sliced .
  • 1/8 tsp black pepper .
  • 1 1/2-1 3/4 lbs pork tenderloins .
  • For optional Garnish .
  • 1 c vegetable oil, for pan frying .
  • 3 tbsps mayonnaise .
  • 1/4 tsp black pepper .
  • 1 c fine dry breadcrumbs

Directions
  • Step #1 Make sauce – Stir together all sauce ingredients in a bowl until mixd, then chill, covered, until ready to use.
  • Step #2 Cook pork – Put oven rack in middle position & preheat your trusty oven to 350°F.
  • Step #3 Cut pork crosswise into 1 ¼” thick slices (medallions).
  • Step #4 Whisk together flour, salt, & pepper in a shallow bowl.
  • Step #5 Whisk together eggs with a pinch of salt in another shallow bowl & put bread crumbs in a third shallow bowl.
  • Step #6 Working with 1 medallion at a time, & dip in egg, shaking off excess, then coat with crumbs, dredge them in flour, letting excess drip off, pressing to help them adhere.
  • Step #7 Arrange pork in 1 layer on baking sheet.
  • Step #8 Heat 1/4” oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then panfry medallions, until golden brown, turning over once, 6-8 mins total.
  • Step #9 Transfer to a clean baking sheet & roast in oven until thermometer inserted horizontally into center of meat registers 145-150F, 6 to 7 mins.
  • Step #10 Serve pork with sauce, lemon wedges & watercress.
