Ingredients
4 c chicken stock .
2 c dried gluten-free breadcrumbs, ensure GF (or you can used a purchased GF packaged crumbing mix) .
2 c polenta (cornmeal) .
1 1/4 c grated parmesan cheese .
3 eggs, lightly beaten .
1 c plain gluten-free flour, ensure gluten free is used .
vegetable oil, for deep frying
Directions
Step #1 Grease & line with baking paper a 4cm deep x 22cm x 28cm slab pan.
Step #2 bring the stock & 2 c of water to the boil In a large-ish saucepan.
Step #3 Gradually add the polenta to the stock in a thin & steady stream, whilst whicking constantly.
Step #4 Ensure the mixture is evenly mixed.
Step #5 Reduce heat to medium-low & stir with a wooden spoon for 20-25 mins.
Step #6 The grains should be soft.
Step #7 Add the parmesan cheese & season lightly with salt & pepper.
Step #8 Spoon the polenta into the prepared pan & smooth over the surface with wet fingertips.
Step #9 Refrigerate for 3 hrs or overnight, until firm.
Step #10 Cut the polenta into 7cm long chips that are 2cm wide.
Step #11 Alternately you can cut into other desired shapes.
Step #12 oat chips firstly in the flour, dip in beaten eggs & coat in crumbs.
Step #13 You can use glutenfree bread crumbs or a commercial GF packaged crumb mix.
Step #14 Alternatively you can use dry polenta in place of breadcrumbs.
Step #15 Deep fry chips in small batches until golden & crisp.
Step #16 Transfer to a wire rack to drain (or use kitchen paper).
Step #17 Sprinkle top with salt & serve as a side dish or with your favourite dipping sauce.
Step #18 Note:.
Step #19 time to make does not include refrigeration time.
