Heart-healthy Chicken Broth (& Yummy Bonus Chicken) Recipe

Ingredients
  • 8 quarts water (approximate) .
  • 1 tsp dried oregano .
  • 1 tsp dried tarragon (a must!) .
  • 5 bay leaves .
  • 1 dash cayenne pepper (optional) .
  • 2 c carrots, coarsely sliced (baby carrots are okay) .
  • 2 tsps black pepper .
  • 2 c celery, coarsely sliced (tops too) .
  • 1 tsp dried rosemary .
  • 1 tsp salt (or to taste) .
  • 1 tsp dried thyme .
  • 8 garlic cloves (minced works fine too) .
  • 1 tsp dried basil .
  • 2 large onions, peeled & quartered .
  • 2 (3-4 lb) whole chickens (I buy natural & avoid broth-injected)

Directions
  • Step #1 Place water into large stock pot, leaving approximately 3" between water level & top of pot.
  • Step #2 (I begin heating the water on high heat as soon as possible as my 20-quart stock pot takes about 30 mins to start boiling liquids.
  • Step #3 BE CAREFUL not to burn yourself when adding remaining ingredients!).
  • Step #4 Remove chickens from pkg & wash thoroughly inside & out; add to stock pot.
  • Step #5 Add remaining ingredients, being careful not to burn yourself.
  • Step #6 Heat to a rolling boil, then simmer over med-heat/flame for 90 mins.
  • Step #7 Remove from heat & cool approximately 1 hr.
  • Step #8 Remove chickens from broth.
  • Step #9 Remove skin & meat from bones; discard skin.
  • Step #10 Refrigerate or freeze meat for later use.
  • Step #11 Return bones to broth.
  • Step #12 Place broth into container(s) & put in the fridge for 8 hrs or overnight.
  • Step #13 Remove as much of the fat that has congealed on top as possible.
  • Step #14 (You could save this "schmaltz" & use it as an oil substitute.
  • Step #15 ).
  • Step #16 Put broth & bones into large stock pot; bring to boil & let simmer over med-heat/flame for 1 hr.
  • Step #17 Remove from heat & cool.
  • Step #18 Strain broth; discard bones.
  • Step #19 Veggies may be discarded or used in another dish.
  • Step #20 (I give the carrots & celery to my dog as a treat.
  • Step #21 ).
  • Step #22 Broth may be used as soon as possible or placed into appropriate containers for refrigerator or freezer.
  • Step #23 NOTES: Don't be alarmed by the fat content per the Nutrition Facts.
  • Step #24 Remember, you skim off the fat.
  • Step #25 The tarragon adds an essential flavor & makes a big difference if left out.
  • Step #26 I also like to use Vidalia onions for a little sweeter flavor.
  • Step #27 I wonder how red onion would work out? Hmmm -- :-).
