Warm Leeks With Toasted Walnuts Recipe

Ingredients
  • 1/2 tbsp red wine vinegar .
  • 1 tbsp whole grain mustard .
  • 2 tbsps roasted walnut oil .
  • 2 tbsps walnuts .
  • 6 medium leeks .
  • 1 tbsp minced shallots

Directions
  • Step #1 Trim the dark green on the leek.
  • Step #2 Walnuts should be sliced & toasted.
  • Step #3 Bring large pot salted water to boil.
  • Step #4 Drop leeks in water & let simmer 10 to 12 mins or until tender.
  • Step #5 Drain & pat dry.
  • Step #6 slice leeks in half lenghtwise.
  • Step #7 Whisk oil, vinegar, mustard & shallot together.
  • Step #8 Then add leeks & toss carefully to coat.
  • Step #9 Spice up to taste with salt & pepper.
  • Step #10 Place 3 leek halves on each plate.
  • Step #11 Sprinkle top with walnuts & serve.
