Cucumber Sour Cream Mold Recipe

Ingredients
  • 1/2 c whipped cream .
  • 1 tbsp lemon juice .
  • 2 tbsps finely sliced onions .
  • 1/2 c sour cream .
  • 1 1/2 c boiling water .
  • 1 tsp dill weed .
  • 1 medium cucumber, peeled, seeded & sliced (about 1-1/2 c) .
  • 1 1/2 c cold water .
  • 1/4 tsp salt .
  • 1 (8 oz) package lime gelatin (8-serving size)

Directions
  • Step #1 Stir boiling water into dry gelatin & salt in large bowl at least 2 mins until completely dissolved.
  • Step #2 Add cold water & lemon juice; stir.
  • Step #3 Refrigerate 1-1/4 hrs or until slightly thickened (consistency of unbeaten egg whites).
  • Step #4 Mix sour cream & dressing until well mixed.
  • Step #5 Stir into thickened gelatin.
  • Step #6 Refrigerate about 15 mins or until thickened (spoon drawn through leaves definite impression).
  • Step #7 Stir in cucumber, onion & dill weed.
  • Step #8 Pour into 5-c mold sprayed with cooking spray.
  • Step #9 Refrigerate 4 hrs or until firm.
  • Step #10 Unmold.
  • Step #11 Garnish as desired.
  • Step #12 Store leftover gelatin mold in refrigerator.
