Beef & Rotini Salad With Tomato Basil Dressing Recipe

Ingredients
  • salt & freshly ground black pepper .
  • 1/4 c vegetable oil .
  • 2 tbsps extra virgin olive oil .
  • 1 1/2 tbsps balsamic vinegar .
  • 3 green onions, finely sliced .
  • 2 minced garlic cloves .
  • 1/4 c basil .
  • 1 tsp sugar .
  • 1 lb sirloin beef, strips .
  • 1 1/2 tsps balsamic vinegar .
  • DRESSING .
  • 1 1/2 tbsps cornstarch .
  • MARINADE .
  • 2 minced garlic cloves .
  • parmesan cheese .
  • 1 pinch sugar .
  • 1 lb rotini pasta .
  • 1 tsp salt .
  • 3-4 tomatoes, sliced

Directions
  • Step #1 Combine beef & marinade ingredients; let sit, covered, at about room temp for at least 1 hr.
  • Step #2 Cook rotini until al dente.
  • Step #3 In a medium-size bowl, green onion, tomato, olive oil, salt, sugar, garlic, pepper, mix together balsamic vinegar, & basil.
  • Step #4 Brown meat in nonstick skillet over medium-high heat; drain & toss with warm rotini & dressing.
  • Step #5 Sprinkle top generously with parmesan cheese.
  • Step #6 The dressing will flavor this salad better if the pasta is warm when dressed.
  • Step #7 Leftover roast beef can also replace the sirloin.
