Cream Of Beer Soup Recipe

Ingredients
  • 2 (12 fluid oz) bottles dark beer
  • 1/8 tsp ground nutmeg
  • 1/2 tsp ground white pepper
  • 1/2 c heavy cream
  • 3 egg whites
  • 1 tbsp white sugar
  • 1 (12 fluid oz) bottle light colored beer
  • 3 egg yolks
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon

Directions
  • Step #1 Pour the light & dark beers into a large saucepan.
  • Step #2 Stir in the sugar, pepper, cinnamon, salt & nutmeg & bring to a boil.
  • Step #3 In a small bowl, whisk together the egg yolks & cream.
  • Step #4 Whisk in a little bit of the hot beer so the mixture warms without scrambling the yolks.
  • Step #5 Stir into the beer while whisking constantly over low heat/flame to avoid curdling.
  • Step #6 Refrigerate until cold.
  • Step #7 Just before serving, whip egg whites in a medium bowl until stiff but not dry.
  • Step #8 Fold them into the soup & serve.
