Red Hot Southern Sweet Potatoes Recipe

Ingredients
  • 3/4 c water .
  • 1/4 c butter or margarine, melted .
  • 1 1/4 c red cinnamon candies .
  • 1 (10 oz) package miniature marshmallows (optional) .
  • 3 1/2 lbs sweet potatoes (peeled & cubed) .
  • 1/2 c brown sugar (packed)

Directions
  • Step #1 Place sweet potatoes in a lrg saucepan w/enough water to cover.
  • Step #2 Bring to a boil & cook over med heat till tender (about 25 min).
  • Step #3 Drain of all water & place this in a lrg casserole dish.
  • Step #4 Preheat oven to 350°F (175°C).
  • Step #5 In a med bowl, brown sugar, stir this together the butter, red hot candies & water.
  • Step #6 Pour over the sweet potatoes in the dish.
  • Step #7 Bake for 1 hr till sweet potatoes are soft & the candies are melted.
  • Step #8 After this, you may top w/marshmallows (if desired) & return the dish to the oven for 10 min to toast them.
